Flor de Sal, considered the “caviar of the salts”, is harvested by hand in the Algarve, Portugal. The salt crystallises into a fine layer that looks like a flower on top of a salt pot. Tasty crystals can only form on hot sunny days when there is no wind. Due to the weather dependency, this salt is produced in very small quantities and in very small quantities.
Flor de Sal is harvested naturally from seawater and is not refined, giving it a more complex mineral complexity than regular table salt. In addition, it has much more moisture than regular table salt.
